Ah Jerrymek, the old Vermont Maple Festival, lashings of food and arts, also before I forget, welcome to Yousifmceaq to the Oracle Forum and thank you for your articulated contribution.
And so to the Maple Festival, actually a gathering of minds and taste buds long before the Pilgrims landed at Plymouth Rock, Massachusetts in 1620. Native Americans had been articulating the benefits of making sugar from the sweet sap of the maple tree for many, many years before the arrival of the Devon edition of the English language in North America, ‘Along with them grockles me luvver!’.
They were already houses or should I say lodges of articulation, ‘scuse I Packajos000, on the subject, according to that old Iroquois legend. The one that tells how Chief Woksis had thrown his tomahawk at a maple tree where it had stuck fast one late winter evening; then immediately after he removed it the following morning, the weather turned sunny and warm, causing the sap to begin to flow from the cut in the tree and drip down into a self contained hollow at the base of the tree.

Chief Woksis’s squaw then used the sap from the natural bowl which was mixed with melted snow to boil the meat for dinner, rather than trail down to the river. As the water in the sap boiled away, a wonderful, sweet maple taste was left with the meat. Same effect as honey glazed Turkey or Ham joints in today’s kitchen.

However, it is most likely that all the other Native American tribes (Mahican, Mashpee, Nauset, Nipmuc, Pennacook, Pocomtuc and Wampanoag etc) in the Massachusetts neighbourhood, Iroquois or Haudenosaunee roamed further East closer to the Great Lakes, discovered the sweetness of the maple tree by sucking or eating ‘sapsicles,’ the icicles of frozen maple sap that form from the end of a broken twig in winter time. As the ice forms, a volume of the water evaporates, leaving a sweet natural confection hanging from the tree.

Anyway back to houses, lodges and in reality camps of articulation, as in the formation and spreading of the sugar sweet word. As winter started to turn into spring, and the days got longer and warmer, Native Americans would move their whole families into areas of deep forest where the sugar maple trees were established and plentiful. On their arrival at these favoured clusters they would set up ‘sugar camps’ for the month or two that was the seasonal period when the maple sap would flow.

Probably the most common early method of collecting sweet Maple sap was to cut V-shaped slashes in the tree trunk, and collect the sap in a vessel of some sort. In the absence of metal pots to boil the sap, the Native Americans boiled off the water from their sap by dropping hot rocks into containers made from hollowed out logs, birch bark, or clay.

Based on the journals of early New England explorers Northeastern Americans made three types of maple sugar. ‘Grain Sugar’ was a coarse granulated sugar similar to what we know as ‘brown sugar’. ‘Cake Sugar’ was sugar poured into wooden moulds to form hard cakes or blocks. ‘Wax Sugar’ was made by boiling the syrup until it became extra thick and then pouring it over snow. This wax sugar is what is known as ‘sugar on snow’ in today’s parlance.

Originally maple sap was boiled down and made into maple sugar instead of the more common maple syrup on today’s supermarket shelves. There was no easy way to store syrup as a liquid, whereas hardened, dry maple sugar was easy to stockpile for use later in the year. The Native Americans of New England used their maple sugar as a luxury commercial item both for gifts and trading, when it would be used to mix with grains and berries and bear fat. During the heat of high summer, tribes concocted a drink made of maple sugar dissolved in water as a special treat.
